What's everyone cooking up in the kitchen under quarantine/stay at home orders? With food items sometimes in seemingly random short supply at my chosen supermarket (my online grocery orders are always a little hit or miss lately) and taking into consideration my family's dietary needs, preparing meals is interesting these days. Limitations on ingredients can create challenges. However, with the flexibility in my schedule afforded by working from home, I've been able to be creative and able to try out new dishes throughout the week, as well as a few that I haven't served up in a while. It's been an adventure looking at recipes in my cookbooks and online, trying to find some pleasing options for my family. On the menu this weekend: Last night we had Cabbage Roll Soup, which was delicious! eloneen , how's this for a coincidence? last night we had a slightly modified Salade Nicoise (how do you put that fancy c into the spelling?) a local store was offering carry out meals and veggie boxes so we ate the chicken dinner Friday night and made the salad Saturday night one extra thing - the box had turnips Mrs Orioles mashed them up and made a sort of latke (turnip pancakes). I was skeptical of this item, but they were actually pretty good. Orioles

orioles70 Great minds think alike! Sounds like you all are resourceful and creative, and made that takeout dinner order go a long way! Although he generally has wide ranging tastes and is usually very open-minded and curious about all kinds of foods from all over the world , the young man does not like tuna, so he will not be partaking in our delicious salad this evening. He'll have to bake a frozen pizza (just an appetizer for his teenage boy appetite) and eat other leftovers for dinner...followed by copious amounts of snacks, I'm sure! He's a typical bottomless pit 16 year old boy! My secret to getting those (necessary!!) French accent marks is typing the word with the accent marks in a Microsoft Word document, and then copying and pasting it into my post! There are probably more sophisticated ways to do it, but that works for me.

I’ve run out of things to cook with toilet paper so tonight it was daughter twos turn. She did a good macaroni cheese with baked broccoli.
Cooking hasn’t really changed here but we seem to be getting bored of meals we would normally like I think it’s because food is one of the only things we have to look forward to everyday.
On my iPad if I hold down on the “c” letter the various options come up, the same happens on other letters such as e and o.

I applaud everyone's ingenuity in the face of this crisis. In Musette Towers I can report we have experienced a sharp increase in chocolate consumption Well, of course you have to consume it quickly in case it goes off

I have eaten more jacket potatoes in the last month than I ever did in the last year and have just discovered that mayonnaise makes a great topping. In our house we also added grated mozzarella which was new too. It wasn't as tasty as cheddar but the mayo helped. We also experimented with paprika on top.

For some reason I am eating a lot of mangos. What was once a one-off luxury is now as common as apples in our house.
Today I experimented with a bubble and squeak tortilla. I just wrapped everything up with a squeeze of HP and surprisingly it worked!

I'm taking advantage of social distancing to make a lot of this salad: In it's original version it involves chopped tomato, peppers and onion and is called "ensalada criolla" (something like "Hispanic-American salad"). But during quarantine I created my own personal variation of it. Given that in it's regular form it already contains a stinking vegetable (onion) I added another stinking vegetable to it, garlick, and called it the "antisocial salad". Not the kind of stuff you'd want to eat when you have a business meeting or a date in the next 24 hours, but delicious with oil and vinegar.

I ventured out of my comfort zone last night and made - risotto! The first time I've ever made one, believe it or not. And quite a success, though I say it myself This is what happens when you describe TV programmes for a living. At the moment, they're showing lots of storecupboard cookery shows where the experts whip up an appetising meal using only chickpeas and a bicycle pump, or whatever. One such chef, Jamie Oliver, showed us how to throw together a risotto the other day. By the time he'd finished, I was determined to try it for myself. Et voila! Thank you, Jamie. When we get back to work (one day), can't wait to wow the colleagues with my proper home-cooked lunch. Börk börk börk.

Recently I seem to be eating a lot of mince. Previously mince never entered our house more than once a year.
But a more exciting culinary development is sausage balls. After acquiring some ropey sausages that were pretty tough when eaten as sausages are meant to me eaten we experimented by squeezing them out of their skins, adding spice and herbs and then rolling them into balls. They were ok when eaten with pasta or with vegetables.
All this isolation makes creativity with food a must.

I made a trifle -
The recipe was tinned peaches on trifle sponges sprinkled with sherry, strawberry jelly, boxed custard and a tin of extra thick cream with optional sprinkles. What makes this Quarantine Cuisine is the fact that the sponges were out of date, so was the custard and the jelly was a bit iffy too. Everything came out of a box, packet or tin and the sherry was probably the freshest thing in there. Also the fact that I am making my Christmas trifle the wrong side of Easter.

It's all gone, trifle never lasts long in our house. I got Carnation Extra Thick cream in a tin from Tesco in the old days before the virus. Asda may have it too.

Yes! I found some in Asda this week, it was right at the bottom of the shelves underneath a huge selection of custard products. Mumsie was so chuffed when I presented her with a tin
